Pepperberry Grilled pork Tendies
The problem many have when they grill a whole pork tenderloin is that the thin end becomes very dry and the thick end is just ok. Always remove silver skin and cut exactly 1 inch medallions. Season with Pepperberry rub and a dash of olive oil. Bag and let stand at room temperature for 1/2 hour. Grill under medium heat with BBQ lid up, turning once every 4 minutes. Turn 4 times till internal temperature is 140 f. Rest 5 minutes and serve.
