Pepperberry or Orange Mountain smoked duck
Separate the breast skin from the meat leaving the skin on. Rub under the skin 1 tbsn per breast side either Pepperberry rub or Orange Mountain rub. Smoke at 275 til internal temperature is 140. This is a little less than chicken as duck is leaner. Then finish at 375 till internal temp. is 160. This will crisp the skin up. Let rest for 10 minutes wrapped and slice.
